As a young chef in Paris, Poul-Åge Kofoed realised that above all, Europe means diversity. Europe’s culinary diversity has since become his business: He and his wife established one of the most popular delicatessen shops in Copenhagen. "Enjoyment lives by interaction and sharing between cultures," says Kofoed. "But you can only benefit from diversity if you respect the differences."
